Vampirism.

There is a mod that enables it, allowing players limited flying ability, extra strength, and some other things like regeneration and what not. Downside is that they are VERY vulnerable to wooden swords, fire, and of course, they burn in the sunlight.

Another thing to think about would be selling chunks of land in the spawn area that players can build either a faction representation or their own shop. This would add another aspect to playing as well.

Yeah i saw this mod only problem is that those people can fly though it could be nice to add the mod for a test run and see how do people handle with it
